Tacos: Weeknight Meals

Recently, I have been trying new meals from Food Network Magazine, Food and Wine Magazine and from some online food sites. I just got tired of making the same things over and over again. I have a wide range of meals in my repertoire but it never hurts to add new twists to my lists.

So, I will share it with you. Of course, me being me, I always add a twist to every dish I make. It adds excitement.


Ingredients:

Shredded cheddar cheese
Lettuce
Tomatoes
Taco shells (hard)
Ground beef or turkey
Sour cream
Twist: shredded apples

This is how I build my tacos, starting from the bottom up. Lettuce, tomatoes, meat, apples then cheese. I started with lettuce because if you put the meat on the bottom it will soak through the shell. The lettuce will provide a barrier for the shell.

The apples provide a crisp, sweet crunch amid the other savory ingredients. I also melted the cheese in the microwave.

Substitute/add on: You can add black beans to the tacos or you can substitute the beans for the meat.




If you have left over ingredients, Make nachos. Break up the tacos shells onto a microwaveable plate, add meat, tomatoes, lettuce, apples and cheese. Microwave for about one minute until cheese is melted. Top with sour cream.
