The Ultimate Egg Salad

Ingredients:
6 eggs, hard boiled (see below for tips)
2 tablespoons dried or fresh dill, basil or cilantro
2 tablespoons extra virgin olive oil
1 tablespoon pickle juice or golden balsamic vinegar
Salt and pepper
*1/4 cup minced fresh celery, onion and/or jalapeno (*optional)
*multigrain bread (*optional)

Directions:
For the ultimate hard boiled eggs, place eggs in a pan covered by one inch of water. Do not layer them. Bring water to a boil then shut off heat. Leave eggs for 10 minutes in water then rinse with cold water.

In the meantime, place all ingredients except eggs in a medium bowl and stir together.
Peel and roughly chop the eggs. Add to the mixture. Serve on multigrain bread. Refrigerate leftovers (will keep up to three days).
